This vinegar comes from the northern region of Italy called Emilia Romagna and originated in to the town of Modena. An authentic Aged Balsamic Vinegar of Modena is simply called “Balsamico”, and the label should always read “Aceto Balsamico”. It has a rich plum color and velvety consistency due to its long aging in wood barrels. The flavor is unlike any vinegar you have ever tasted, and in reality is not even considered vinegar because of its penetrating aromas, pleasant acidity and thickness. It is used as a condiment drizzled over grilled meat, steamed fish and vegetables, on Parmigiano Reggiano cheese, on fruits such as strawberries, pears, figs and cream ice-cream.
